Formaggio Latteria Friuli Venezia Giulia
Cheese linked to rural communities and the birth of the turnarias. The first Latteria cheese in Friuli dates back to 1881, produced by the Latteria turnaria of Forni Avoltri, in the province of Udine, by the master Caneva.It is produced both by artisanal and industrial dairies, and by the few remaining dairies, which employ slight technological differences in processing, but which are able to influence the sensorial characteristics of the cheese. The forms are marked (fasces marking) with the name of the country where the dairy is located and with the date of production. Latteria is Slow Food Presidium with the following motivation: "Promoting and enhancing Latteria cheese starting from the selling price can help to stem the definitive closure of the ancient system that is at the base of the product".the raw or thermised milk of two milkings, of which the evening is partially skimmed, is heated to a temperature of 32-35 °, inoculated with selected grafting or ferments and added with liquid rennet or veal powder. The coagulation lasts 25-40 minutes and the curd is then broken to the size of rice grain. After semi-burning, at a temperature of 43-45 °, the dough is extracted and placed in molds where it is subjected to prolonged pressing. The salting takes place in brine.

UNCLAIMED ORDERS:
It is the customer's responsibility to follow tracking advice and be present when order is being delivered. Regardless of the postal service, deliveries will always be attempted at least once, and if undeliverable, will then be taken to the local post office or relevant postal center until claimed. If customer does not claim this order within 5-10 business days (may differ depending on country and service), the order may be returned to us, and in such a case we do not offer a refund or replacement, however can re-send the order if the customer is willing to cover postage costs.
