  • Mortadella is the most famous salami of Bologna's gastronomic tradition. It is obtained from a mixture of pork meat of the highest quality, mixed with fat cubes, called lardons. It has the characteristic oval or cylindrical shape, the cut is bright pink and the taste is delicate.

The geographical origins of mortadella are identified in the territory surrounding the ancient Etruscan city of Felsina, the current Bologna; here the landscape was characterized by oak woods, whose acorns were a source of nourishment for the pigs, from whose meat this sausage is obtained.

The name of the food dates back to the ancient Romans and derives from the term "mortarium", the tool that was used to crush pork. This hypothesis is corroborated by the discovery of two stone slabs now exposed in the Archaeological Museum of the city: one depicts the practice of raising pigs, the other portrays a man intent in the work / shredding of meat through the mortar. Other sources, in particular, refer to the "farcimen mirtatum", a pork sausage, always from the Roman era, prepared in a mortar and flavored with myrtle berries.

Mortadella was rediscovered in the late Middle Ages and in the Renaissance: at the end of the 1300s, the ancient Guild of Salaroli, during the process of making mortadella, was responsible for stamping the warranty seals which, with reference to the origins of the product, could not that depict a mortar and a pestle.

Only since 1661, mortadella will be associated in an indissoluble way to the city of Bologna, thanks to a provision issued by Cardinal Girolamo Farnese who regulated its production. In a sense this document is the first example in the world of protecting a gastronomic product. Today, in particular since 2001, the Consortium Mortadella Bologna has been established with the aim of protecting and enhancing this product of the territory which, since 1998, has obtained the European PGI recognition.

The phases of processing of mortadella are very specific: the mixture of pork, mixed with lardons, spices and herbs, is first bagged and then cooked, using special dry air stoves, with different timing, from a few hours to a day whole, based on the size of the bagged. Subsequently the product is cooled by a shower with water and finally left to rest in cooling cells.
